Four Seasons Resort Costa Rica recently welcomed Mario Alcocer as the new Executive Chef at the property. With more than 20 years of culinary experience at Four Seasons Hotels and Resorts, he was previously Executive Chef at Four Seasons Hotel Westlake Village and is originally from Mexico City.

Chef Mario started his Four Seasons career in 1991 as a line cook at Four Seasons Hotel Los Angeles and was promoted to additional roles including Garde Manger Sous Chef, Restaurant Chef and Banquet Chef during his 15 years at the property. In 2006, he served on the opening team for Four Seasons Hotel Westlake Village and soon after was promoted to Executive Chef. In that position, he oversaw culinary direction for bar and banquet operations and three restaurants including the popular Saturday night Mercato Italiano dining experience that he helped create. He also expanded Hotel menus to include more healthy options for guests.

In his new position as Executive Chef at Four Seasons Resort Costa Rica, Chef Mario will provide culinary inspiration and direction for a talented team at the property’s five restaurants and lounge including:

• Caracol steakhouse, featuring an organic and biodynamic wine list and new Chef’s Table with seating for eight in a gorgeous organic garden setting
• Congo’s Bar and Grill with poolside dining and churrascaria
• CR Burger, a casual breakfast and lunch burger shack offering fantastic angus, kobe beef, chicken and lemongrass mahi mahi burgers, watermelon pinchos, shakes and fries
• Di Mare restaurant, featuring Italian and seafood specialties and a new behind-the-scenes, hands-on Chef’s Table dining experience with seating for up to four guests
• Papagayo, serving local specialties for breakfast, lunch and dinner including a dinner menu inspired by the five key food provinces of Costa Rica
• Tico’s bar, with exotic local cocktails and delicious bocas from around Latin America

Chef Mario is married with three children and loves mountain biking and other outdoor activities – perfect for the pura vida life of Costa Rica. The veteran Chef brings Latin flair and talent for creating interactive and healthy culinary experiences.
